A Devonshire tax-time tea!



What a great weekend to start compiling all our paperwork for our tax returns! Do you detect a hint of sarcasm here??! This is a task that I dread from the 30th June right through to the 31st October every year. I have procrastinated over this for weeks now, putting it off and putting it off and hoping that maybe the magic tax time fairy will come and miraculously sort out all our receipts. Alas, no sign of her yet! Although I must admit the weather has been less than average this weekend and with the exception of a couple of cakes and cupcakes that we needed to bake, it really has been a perfectly free weekend to knock over this mundane task of rifling through receipts. 

So I’ve made a start this afternoon (start being the operative word!) but was easily distracted however with the thought of some afternoon tea to make the task at hand a bit more plesant. So I decided an easy batch of scones was on the cards to accompany my cuppa. And although the magic tax time fairy didn’t visit whilst I was busy baking in the kitchen, at least it’s made the rest of the afternoon slightly more pleasurable.

So here’s the recipe for Meko’s easiest ever scones. Give them a try……I can’t promise they’ll make your tax returns do themselves, but at least they taste good.

(makes 12)
3 cups plain flour
6 tsps baking powder
¼ tsp. salt
75g butter
1 to 1 ½ cups milk

Sift flour, baking powder and salt together in to a bowl.
Add butter and beat together until it has a breadcrumb like appearance.
Add 1 cup of milk and mix quickly with a knife to form a soft dough. Add additional milk if needed and then knead gently.
Lightly dust an oven tray with flour. Press scone dough out onto the tray and cut into 12 evenly sized portions.
Leave a 2cm space between each scone. Brush the tops of each scone with milk.
Bake at 220c in a preheated oven for 10 mins or until golden brown.
Serve warm with lashings of whipped cream and jam.
