Having our cake and eating it too!

It's been a busy couple of weeks here in the Meko kitchen with lots of cake orders coming in thick and fast and still more to come! Today we had the pleasure of creating a very special Scottish themed cake for a family celebrating the anniversary of their Grandfather's arrival in Australia. This cake was a lot of fun as for the first time the reigns were passed over to me to research and design it, I even got to try my hand at painting on the cake! Usually my artistic talents are reserved for canvas only, but I found out last night in painting a sprig of heather, it is indeed transferable on to fondant! Who would have thought?!

Last week we also had the pleasure of designing and making a very cute bunny rabbit cake for lovely two year old girl, Florence, who loves her bunny rabbits and just adores pink. We love doing kids cakes and are looking forward to doing a bowling themed cake too for a certain nephew of mine who turns six in a couple of weeks.

This afternoon we also got to consult on a beautiful vintage garden romance themed wedding cake with a lovely couple who are marrying next year. But it doesn't stop there, Matt is currently back in the kitchen making a start on a 60th birthday cake for a Dad of a dear friend of ours.

So it's all cake, cake, cake at the moment! Now I can't complain about business (that bit is great!), but I can complain about the left over cake off cuts in our kitchen that seem to be calling out my name every couple of hours! Not an ideal situation given I just bought a very small dress I need to fit into for a Gala dinner in two weeks time......hmmmmm.

We do have another really exciting cake also coming up in the next couple of months where we have been asked to create a spaghetti bolognese cake! Yes we will be attempting to create a bowl of spag bol out of fondant as the grand finale of Sarah Pinch's Spaghetti Blogenese where she has searched far and wide for the past year to find the best Spag Bol in Melbourne! Now that's a challenge and we can't wait!

Anyway more on that later, as I am sure I can hear something calling my name from the kitchen!

A hot chocolate not for the faint hearted.........

Out and about on this Sunday afternoon, I was fair unimpressed to see the temperature gage on my car didn't seem to be moving over the 8 degree mark! Only one month into this bitterly cold Melbourne winter and I am already wondering how much more I can endure?! Give me the sunshine and heat any day please! But without packing up shop and moving to Queensland, or dare I say it even Sydney, we often just have to warm ourselves up the best we can. So I thought after shivering most of the day away a decadent hot chocolate was definitely on the cards. So I put Chef Meko, otherwise known as my darling husband Matt, on the job.
Now this hot chocolate isn't for the faint hearted, nor the weight conscious mind you and you'll understand why once you read the ingredients! So if you are in need of some warming up and you're not afraid of a little indulgence, give this recipe a go.......and then just close your eyes and enjoy the creamy chocolaty goodness :)

Makes two
300ml cream (you can use light cream if you prefer)
300ml milk
200g milk chocolate (we used a good quality Lindt)
Marshmallows

Over a high heat, stir together the milk and the cream in a pot until it begins to boil. 
Break up the chocolate into pieces and add to the milk and cream mixture. Remove from the heat and stir until melted through.
Serve immediately with marshmallows.
